Any other beer drinkers in the thread. I just spent the weekend in Ashville, NC, which is a great hub for quality beer. We were at a music festival at Pisgah Brewing, so we didn't get to pop around Ashville proper quite as much as I would like, but we made it to Ashville Brewing and - my favorite in the area - Burial Brewing.
I had an imperial stout with chocolate and vanilla at Burial that was 14%. It was like a proper kick in the mouth. It was great though. I also had a breakfast dopplebock with coffee and maple that was out of this world. I would normally say that is a little too cute with the flavors even for my tastes (I love dark beers with big flavors), but everything was really well blended and nuanced. Just enough maple and coffee to add nuanced, but not so much that you forget you have a beer in your hand. I was really hoping to get back to Burial to get a growler and/or a few cases (they don't have distribution where I live even though it isn't far), but my wife was in rough shape after a day of drinking in Ashville so we just headed home. Gotta get down there again soon though.

When I first got into craft beer in the late 2000s, I didn't care for most imperial stouts because they were so aggressively hopped that they might as well have been black IPAs. In recent years, the pendulum has swung too far in the other direction. Good luck finding an imperial stout that doesn't have a million adjuncts and isn't aged in some kind of barrel.

This is why I tend twards a good Russian Imperial Stout when it comes down to it, Old Rasputine being my favorite standby. I love my experimental beers and flavor combos (especially in dark beer), but simplicity is generally my favorite in this regard.

That is really cool. Do you ship to NC? I am not sure I have ever crossed paths with Trillium... maybe at a beer fest because I recognized the name immediately. I was out in SLC in 2013 (when y'all opened?) and moved back east in 2016. Just looking at the website though I see quite a few imperial stouts and other dark beers that have my attention. A lot of this stuff is right up my ally so I feel like I would have noticed it if I saw it here.
Ah man... reading that original post was bittersweet. I miss being able to just pop down to Asheville (about 2 hours for me) and bounce around breweries. Thankfully we have a few small but pretty good ones around here and two bottle shops that work hard to bring good stuff to us.

Our imperials are great Cap. We just released a new imperial collab w/ J Wakefield today that sounds really great. I've been finding myself indulging way more in stouts as of late since especially in NE we are so oversaturated with IPAs

I am all about the big porters and stouts, especially imperial stouts. I like IPAs, but I think everywhere is over-saturated with them, honestly. One of my favorite Ashville breweries is Burial and they can a new IPA just about every week. I like them, but either they are canning roughly the same beers over and over or my pallet is not quite refined enough to discern them.

Even working at a brewery, I still struggle w/ that aspect too. I'm not one of those people who can instantly tell what hops are present or stuff like that. Especially in NE as well where we're just presented juice bomb after juice bomb
